Sweetened Cajun Chicken

Last night I wanted something sweet and savory, so off to the kitchen I went. We do not eat a lot of beef so I knew dinner would consist of chicken. I cut the breasts into strips the long way, cooked and set aside. While the chicken was on the stove I popped red potatoes seasoned with olive oil, pepper, garlic, onion, oregano and brown sugar in the oven for 30 minutes at 500 degrees. After the chicken was done I made a gravy out of the juices left over. Adding flour, milk, Cajun seasoning, onion and brown sugar to the olive oil and chicken juice, i ended up making the most delicious meal I have made to date. I know it is a Hodge podge of ingredients but they all worked so well together to create a lightly sweetened Cajun dinner that everyone loved and raved about!! I hardly ever measure, I use the taste as you go technique when making my own recipe!Here is a cute photo of Audrey! She is getting so big and learning to walk more and more everyday! Still no crawling or teeth but she is slowly getting there.
