Halloween Goodies

We are going to a Halloween party tomorrow and I am to bring some goodies for everyone. I made Several different kinds of Rice Krispy treats along with some Blueberry Muffins. Check out the cupcake stand. I just bought it at Marshalls for $20, what a steal. We are going to use it for the wedding so I am on a mission to find another one just like it!

Pumpkin Patch 2010

Fall is probably my favorite Season besides Winter. I love the smells, the crispness of the air and all the colors. We started a tradition last year with taking Audrey to Maris Farms for a day of pumpkin patch fun! This year we brought along our good friends Christy and Mikell Young along with their daughter Penny who is the same age as Audrey

Just Dance

We found this awesome club inside the Muckelshoot Casino in Auburn called Club Galaxy. Every Friday is ladies night along with 80's night! They have this amazing band called That 80's Band. They are all impersonaters and dress up like the singers and sing all the hits. We dance the night away each week and it only gets better and better.

Bad Ass Cake


The Washington Art Museum asked our Culinary Program to donate a cake for their 75th Anniversary Auction to raise money for the Museum and we happily accepted. My classmate Sheila and Shauna got right to work brainstorming and baking the cake. I was lucky enough to be a part of the process and help these girls put this cake together. It turned out better then we hoped and we cant wait to hear what it went  for at the auction.

Weekend in Arizona

Last weekend we jet set our way to Lake Havasu Arizona for some fun in the sun with family. We all needed a break and last weekend was perfect. Here are just some snapshots of the fun. We spend most our time in the pool or around the house just spending quality time together. O before I forget a little side note AUDREY TOOK HER FIRST STEPS while we were there but amongst the excitement I didn't take any photos. Don't worry though I won't dissapoint, ill even up the anty and upload a video.

Orange Cream Sicle Frosting

I use this frosting on almost every cupcake especially my
Pumpkin Cupcakes 
&
Caramel Apple Cupcakes
It is the most simple frosting next to my cream cheese frosting

Orange Cream Sicle Frosting

1-8 Ounce Package Cream Cheese
1/4 C Splenda
1/4 C Fresh Orange Juice
Orange Zest

  • In a medium size bowl mix together cream cheese and splenda until well combined.
  • While the mixer is on slowly add the orange juice until you have reached desired consistancy. I like mine thick, it makes it easier for piping and decorating.
  • Add half your orange zest to frosting leaving the other half as garnish for your finished cupcakes!

Caramel Apple Cupcakes

Recipe

1 1/4 C Flour
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
1 Tsp Cinnamon
1/4 Tsp Nutmeg
1/4 Tsp Cloves
1/4 Tsp Allspice
1/4 C Splenda
2/3 C Oil
3 Eggs
1/4 C Caramel Apple Butter
1 Tbsp Starbucks Caramel Syrup
Caramel Syrup
  • Preheat Oven to 350 Degrees
  • In a bowl combine flour, b.soda, b.powder,cinnamon,nutmeg,cloves and allspice, set aside
  • In a large bowl Cream together the splenda and oil until well combined, one at a time add the eggs beating after each egg
  • Lastly mix in the Caramel apple butter and mix well
  • Once all the wet ingrediants are mixed, mix in half of the dry ingrediants, making sure not to over beat, overbeating can cause the batter to dry out while baking.
  • Mix in the final half of the dry ingrediants and fold in until well mixed. Once all the ingrediants are mixed drizzle the Caramel syrup on top of the batter and mix in.
  • Fill cups 2/3 full and dollop caramel syrup on top of batter before baking
  • Bake between 10-14 minutes, depending on your oven

Audrey Crawls!!!!

It happened about 2 1/2 weeks ago, we were hanging out in the living room doing various things when all of a sudden, Audrey got up on her hands and knees and started crawling back and forth on the living room floor. I was so excited that I screamed and then I cried and then for what felt like the next 6 hours played on the floor with her watching her crawl back and forth. I am such a proud Momma! This means big things for her one of them being walking, which now is only right around the corner.

Slightly Sweetened Chicken and Rice

We all know my love for sweets but I think I have taken it to a new extreme! I have managed to create, and im sure im not the first, a sweetened Chicken and Rice Dish! Just like my sweetened Cajun Chicken I have seasoned the cream sauce with just a hint of brown sugar and I'm in love. Its just subtle enough to pick up in the beginning but does not overpower the simplicity of the rice!

Back 2 School


I love being back in school! Culinary School is the best part of my day besides coming home to my family! Since there is not much non restuarant cooking this quarter most of my creativity happens at home! My first meal was Smoked Sausage with a Blackberry and Sweet Chili Glaze with mashed potatoes and corn, the next night was Double Baked Radiatori! Keep watching for more fun recipes and simple dinners!
I used homemade Blackberry Jam my Brother in Law's Mom gave me and this bottle of goodness Sweet Chili Sauce, I literally put this on everything! I use half Jam, half chili sauce for the glaze.
You can use any type of Jam or Current you want just keep the mix 50/50!
