Happy Hump Day

Today was supposed to be another busy day but because Audrey is having a bad reaction to the medicine the GI doctor perspired I canceled all our plans, including our family holiday photo session. It all started yesterday at about 4AM, Audrey spent the whole day with explosive, yes gross, diarrhea. While on the good side this means the medicine is working, it also means that Audrey has developed a really bad diaper rash. It does not hurt her to poop but it does hurt when we wipe her clean. We have been on a routine of diaper cream every time we change her diaper which has been helping a lot. I called and told the GI doctor that I have reduced the amount of medicine she takes by half and about this reaction. She said that if she wants me to change anything about this routine she would call me and let me know. I really hope this rash goes away or that we can change the medicine to a different laxative. On the good side, Audrey had a good day today. She had several pretty good naps which allowed me to relax today and get some house work done. I finally put away the clean laundry that has been sitting in the laundry room for a few days and add some more recipes to my book! I have started my own recipe book of family favorites and new recipes I have tried or want to try! It is turning out well and I think I want to pass it down to Audrey when she gets her own house! Tonight for dinner was a Cajun Skillet with sausage dinner! It was amazing, which seems to be only descriptive word when it comes my food! Here is the recipe, it was super fast and cheap to make! I got it out of this great cook book my grandma got me called, " Cheap.Fast.Food" by Beverly Mills and Alicia Ross. Its quick great food that is cheap on the budget that uses a lot of fresh ingredients!

1 1/3 cups long grain rice
1 Tbsp vegetable oil
1 large onion(for about 1 cup chopped)
8 ounces regular kielbasa sausage
2 coves garlic minced
1 tsp cajun style seasoning blend
1 can tomato diced tomatoes
1 small can tomato sauce
1 can red kidney beans

Bring 2 2/3 cups lightly salted water to a boil, add rice, stir and reduce the heat to low.Cover the pan and simmer until the rice is tender, about 20 minutes

Meanwhile, heat the oul in an extra deep 12 inch skillet over medium heat. Peel and coarsely chop the onion, adding it to the skillet as you chop.

Cut the kielbasa into thick slices, adding them to the skillet. Add the garlic and Cajun seasoning to the skillet. Cook stirring frequently until the onion is tender the beginning to brown, about 3 minutes.

Stir n the tomatoes with their juice and the tomato sauce. Rinse the drain the beans and all them to the skillet. Stir to mix well.

Simmer until the beans are heated through Serve over a hot bed of rice!
