Tonight was hectic, along with trying to get the dishes done, the baby was crying and the sausage for dinner did not cook right the first time, so I was a little frazzled to say the least. In the end dinner turned out to be amazing and there is ton for leftovers! The recipe is super simple, not a lot of prep time and only 20 minute cook time! Here is the recipe, try and enjoy!!8 oz uncooked ziti rigate pasta
2 tsp oil
1 medium green bell pepper, chopped
1 medium onion, chopped
12 oz sweet Italian sausage
1 part skim ricotta
1 1/2 cup shredded mozzarella
1/4 cup grated Parmesan
1/4 cup chopped parsley
2 cups marinara sauce
Heat oven to 400 degrees
Cook pasta in large pot of slightly salted water
Meanwhile heat oil in large skilled over medium heat, add peppers, onions and sausage
Cook until sausage is brown, remove from heat and slice sausage
Mix ricotta, 1 cup mozzarella, 3 tbsp Parmesan and parsley in large bowl
Drain pasta, toss with the cheese mixture, sausage mixture and 1 cup marinara
Pour pasta mixture into a 2 qt shallow baking dish, spoon remaining sauce on top
Sprinkle with remaining mozzarella and Parmesan, bake uncovered for 20 minutes
