Peanut butter Cup Cookies

Nathan leaves on Sunday for a 5 days fishing trip to eastern washington so I decided to make his best friend Joe, who is going with him, and Nathan these great peanut butter cup cookies! They are a new twist on old boring peanut butter cookies! One of Nathans favorite candies are peanut butter cups so this is a special treat for him! The recipe is super easy and it all takes about an hour cook time included!

1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 stick non salted room temperature butter
3/4 dark brown sugar
1/2 cup sugar
1 large egg
1 teaspoon vanilla extract
1 12oz bag of peanut butter cups, coarsly chopped

heat oven to 375 degrees line 2 baking sheets with parchment paper.
in large bowl mix flour, baking soda and salt
using electric beater, mix together butter and sugar until creamy
add the egg and vanilla and beat to combine
gradually add the flour and finally
fold in peanut butter cups
bake for about 12 to 15 minutes until golden brown!
