Recipe for Easy Cheese Meatloaf


Ingredients
  • Meatloaf:
  • 1 lb. Ground beef
  • 1/2 lb. ground pork
  • 2 eggs
  • 2 cloves garlic, minced
  • 1 med. onion
  • salt and pepper to taste
  • 3 tbls. ketchup
  • 1-2 dashes worcestershire sauce
  • Bread crumbs (Enough to bind all ingredients together)
  • Cheese filling:
  • 1 egg
  • 3/4 cup ricotta cheese
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup fresh parsley, chopped

Directions
  1. Combine all meatloaf ingredientsin mixing bowl
  2. Combine all cheese filling ingredients in another mixing bowl.
  3. Press 1/2 of meat mixture into loaf pan making a well down the center lengthwise.
  4. Spoon cheese mixture into well.
  5. Top with remaining meat mixture and seal sides
  6. Bake @ 350 for 1 hour.
  7. Let rest for 5 minutes.
